Thread: Buffalo Chicken wing soup

    Default Buffalo Chicken wing soup

    2 stalks of celery - chopped
    2 carrot sticks – peeled and chopped
    2-3 cups of cooked shredded chicken
    1 8oz bottle of hot sauce
    ¼ cup of flour
    8oz of shredded cheddar cheese
    1 pint of light cream
    1 14oz can of chicken stock
    ¼ cup of butter
    1 small Vidalia onion diced



    Melt the butter in a stockpot, add the celery, carrots, and onions. Cook until tender. Add the flour and coat the vegetables. Add the chicken stock and continue stirring until the sauce begins to thicken and all flour lumps are dissolved. Add the chicken, and light cream and continue stirring to combine the cream. Turn heat higher up to almost a boil. Add the hot sauce, and cheddar cheese when the mixture is warm…the cheese will help thicken the soup as well.

    Serve with crumbled blue cheese on top.

    You can play around with the thickness of the soup by using light cream or heavy cream, or milk. Skim milk will make it quite thin, but I like mine like a stew!

    That sounds interesting. I'm on a diet, but I could make a few changes, like lowfat cheese, etc. What kind of hot sauce do you use? Is it just a little hot, or OMG hot?

    I have both; just a little warm and OMG!! lol

    Usually I use the a little warm sauce.

    I made this today. My hubby and I both liked it, I'm sure we'll be having it again. I modified it a bit with low fat cheese, and skipped the flour, so it would work better with my diet, and also cooked the whole thing in the crock pot. It was quite a satisfying meal, with fresh veggies and dip. Thanks!

    I especially like the crock for recipes with shredded chicken. For this one, I just used 3 chicken breasts, and only added the broth, carrots, onion, and celery, for 5-6 hrs. Then shredded the chicken, and added the other stuff. I kinda wondered if I should have waited awhile to add the celery, for a more crunchy-tender effect. Next time, I will make a bigger batch, knowing that we like it now. The first one was just kind of an experiment!

    I'm not sure, I'll have to let you know...LOL. I already had to tell hubby the recipe came from a guy named Stoner...

    He didn't act very surprised...lol. I used to hang out on biker forums, so he is used to me having conversations with guys with names like "Hawg", "Mad Dawg", etc.!
