Broiled Bald Eagle
4lbs plucked Bald Eagle
Juice of 1 lemon
½ cup white wine
Tablespoon Worcestershire sauce
¼ cup butter
Salt and pepper
Turn on broiler. Cut eagle in half and salt and pepper to taste. Melt butter in a saucepan then stir in lemon juice and Worcestershire sauce. Arrange eagle on broiling rack and baste with lemon butter sauce. Put eagle under broiler and broil for about 20 minutes, basting once. Turn eagle over and broil five more minutes. Serves 4. Enjoy!!
